A covered market, historically food-led, was rapidly falling out of use. A study was needed to review the space’s potential from an F&B perspective and understand its scope for regeneration to provide employment and enrichment.
The FoodSync team used reverse-engineering to better understand how the challenge of wastage caused by an unpredictable footfall could be addressed. The concept of numerous food production hubs, each with a retail counter, was developed.
Soft market testing was carried out with potential food operators to gauge interest. Although the redevelopment stalled - as the council prioritised the creation of residential spaces - the concept is ripe for relocation, businesses have been incubated and networks built.
