Commissioned by Wigan Leisure & Culture Trust (WLCT), Inspiring Healthy Lifestyles to support their new café concept roll out, appraising the balance of the menu with regard to its health profile. With limited time before the concept was due to go live, we developed a range of products that would provide some nutritional balance to the menus and improved the sustainability profile of the concept. Our approach used existing people and equipment but enhanced awareness of food production in line with good practice and optimised menu design, which meant our recommendations could be easily implemented and were commercially feasible.
